Locavore NXT is the reimagined evolution of Restaurant Locavore, situated in Singakerta south of central Ubud. Operating with an unwavering commitment to 100% local Indonesian sourcing—excluding imported dairy, wheat, and produce—the kitchen produces seasonal multi-course tasting menus driven by indigenous botany, koji fermentation, and koji vinegar production. The custom-built architectural pavilion houses an open production kitchen, a fermentation test kitchen, and a drink pairing bar.
